Today I’m sharing an easy fried rice recipe that I’ve been making for years!
My mom is Korean and has been cooking fried rice for as long as I can remember. She can put anything in it, and it always turns out so good! Sophia is my rice lover, and this is one way for her to get in her veggies. If you have a toddler, you know what I mean!
Ingredients:
- 2 tablespoons avocado oil
- 2 Aidells chicken sausages, diced
- 2 medium Yukon gold potatoes, diced
- ½ white onion, diced
- 2 carrots, diced
- 3 stalks green onion, diced
- 1 red bell pepper, diced
- 1½ cups white rice
- 2 eggs, whipped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves of minced garlic or 1 tsp garlic powder
- Salt and pepper to taste
I whip up a big batch of fried rice when I need to use up what’s left in the fridge. For this recipe, I used Aidells chicken sausage for the extra protein, but you can use chicken, beef, bacon, or even spam.
You can put in any veggies that you have on hand, and chop everything in small pieces. I usually put in broccoli or peas but since I didn’t have any, I put in bell pepper, carrots, and potatoes. A little secret is to add in potatoes to your fried rice, it makes it taste so much better!
In a large nonstick frying pan, add in a tablespoon or two of oil. Then, add in the potatoes and sausage. I don’t measure the oil or seasonings, I just eyeball it and add as I go. On high heat let the sausage and potatoes fry up for 5 to 7 minutes.
Next, add in the carrots, white onion, and bell pepper into the pan. I suggest adding in the green onion at the end which is what I normally do. This time I accidentally added it into the pan and it got a little too crispy. Continue to mix the mixture so everything gets cooked evenly for another 5 to 7 minutes.
Add another tablespoon of oil, I used avocado oil because it has a higher smoke point. Feel free to cook longer to soften the vegetables to your taste. Move the mixture to the side of the pan, and add the whipped egg to your pan. I mix the egg until cooked and then mix everything all together.
Now add in your white rice. Here is the rice cooker that we love and use often! Add in the sesame oil, soy sauce, garlic powder, salt, and pepper to the rice.
Continue to mix everything together for a few more minutes. Fried rice is so easy to make and you can’t go wrong with it. I always make a big batch so that we can have leftovers for the next day!
